If you want sound out of your home theater why are you sending the audio to your TV? Most TVs won’t pass audio. I don’t know of any TVs that pass surround sound audio. What you need to do is to send the audio from the PS3 to your home theater system directly. I would hook the PS3 to the TV with HDMI and send your audio to the home theater system via optical cable. (Adjust PS3 settings accordingly. ) Then plug your cable or whatever your TV source is into the home theater system and run the video out to the TV.

Ummm. . . no. Your PS3 will only come through the home theater system if you have it hooked up to the receiver input somewhere.
The first thing you do is read the instructions.
Then, if that doesn’t help you, try connecting the source of the TV signal (cable, dish) to the receiver input. Then the video output goes to the TV and the audio output goes to the speakers. You still use your cable remote to switch channels but your sound should be controlled by the home theater system volume.
Any additional components (DVD, PS3) that you want to hook up need to be hooked up to the receiver in the other input jacks (video 2, video 3, etc. . . ) The receiver switches the source when you pick which input you want to hear and watch.
Hopefully you bought a nice $$$ receiver to handle the newer components??? That way you don’t have to switch cables or buy a switch. The receiver does it for you.
    Good luck
